Pizza and Love

One thing my family is well known for, is their pizza.  This is, of course, very out of character for a Caribbean family, well you would think.  Well the truth is, the way our family shows love is food, and making pizza (a well loved entree in the American culture they have come to adopt) is one of the many things they have perfect for birthdays and other gatherings.  

Admittedly, the pizza dough was always bought from our local pizza store.  According to my grandmother, "we should support our neighbors," and I thinks she simply believed that.  

Unlike the pizza bought from our local pizzeria, my grandmother would chop up all the veggies beforehand and put them in a well oiled pot and sautéed them all to create some depth to the flavor.  









 





Recipe:

1 red bell pepper
1 orange bell pepper
    1 orange 
1 feg garlic
1 tablespoon olive oil
pizza dough (homemade or purchased) 
marinara sauce (homemade or store bought, we like RAO's for store bought)  

Slice the red bell pepper, orange bell pepper (yellow would work well here as well), and the onion.  
Heat the olive oil in a pot, add the onions and sauté them before adding the garlic (adding the garlic too early may make it burn or give it a less than pleasant taste). 
After about a minute or so, add the bell peppers and sauté. 
Allow this to cool. 

To arrange the pizza: 
Preheat the oven to 350 degrees 
Oil a pizza pan, and place a piece of parchment paper to match the size of the pan (TRUST ME!) 
Place marinara sauce on top of the pulled dough leaving about an inch at the end for a crust.  
You can sprinkle the cheese on now, if you would like, or add the peppers on top.  This step is interchangeable depending on your preference: cheese on top or topping on top. 
Finish with a drizzle of olive oil and pop it in the oven for 20-25 minutes, or until done.
